ten months with colsen

oh man, i can't believe in 2 short months i'll have a ONE year old! wwhhhattt?? i'm really geeking out. this kid seriously is so fun though! i love when you can tell that something just "clicks" and he understands it. in a day he picked up clapping really quick, and every time we say "clap your hands! clap!" he claps them. it's so cute to see him learn words and actions. he's not quite crawling on all fours yet, but he's getting SO close. he army crawls around and rocks on all fours, but hasn't learned to put those together to crawl.
some things about colsen this month:
+ learned how to clap his hands
+ two more little teeth are making an appearance on the bottom
+ drinks out of his sippy cup all by himself!
+ loves to eat peas, hummus, carrots, applesauce, wheat toast, cheerios, beans, and several others. he's a pretty good eater and is willing to try new things
+ army crawls
+ gets on all fours and rocks back and forth
+ recognizes and understands the words "more", "all done," "milk" "water", "dada" "mama" and "bear" (his little stuffed animal)

week 38: he doesn't quite like crawling around on the hardwood floor (i don't blame him!) but he'll sit there and hang out while i'm cleaning or getting things done around the house.
week 39: he LOVES his little bear. sometimes when i go in to peek on him while he's sleeping, he's holding on tightly to his bear. i always ask him, "where's bear?" and he'll look around then smile when he spots it. :)

delicious vegan pancakes

since finding out about colsen's dairy & egg allergy, i've been trying out new recipes to eat (since i am still breastfeeding). one morning kevin surprised me with breakfast in bed and he made these delicious pancakes for me and i was amazed at how yummy they were! ever since, i've been hooked on them and make them often. my favorite thing about these pancakes is the crunchier outside and soft middle (yumm!) and they soak in the maple syrup perfectly. i modified the original recipe a bit by making them wheat pancakes so they're a little healthier ;) even if you don't eat vegan, but don't have any eggs on hand - try out this recipe and maybe you'll be hooked too!
vegan wheat pancakes
dairy free / egg free
1 cup of whole wheat flour
1 tbs. sugar
2 tbs. baking powder
1/8 tsp. salt
1 cup almond milk (or soy milk)
2 tbs. vegetable oil
Directions:
Combine the 4 dry ingredients in a mixing bowl - (flour, sugar, baking powder & salt).
Add the almond milk and vegetable oil to the mixture.
Mix until smooth.
Spoon one pancakes' worth of the mixture into the heated pan.
Flip (carefully) when you see the bubbles in the middle of the pancake, or if the edges are looking stiffened.
Repeat until the batter is gone.
** i suggest you make the batter a little ahead of time and let it sit so the batter thickens (if you want thicker pancakes)
